Spinach, Tuna & White Bean Salad

This recipe serves 4


  • 1 pkt Rainbow Fresh Spinach
  • 375 gram can cannellini beans, drained
  • 375 gram can tuna, drained
  • 1 Lebanese cucumber, chopped
  • 2 medium vine ripened tomatoes, chopped
  • 1/4 cup chopped flat-leaf (Italian) parsley
  • 2 tablespoons olive oil
  • Juice of 1/2 a lemon
  • Salt and cracked black pepper


Drain and wash cannellini beans then drain tuna and place both in a large bowl. To the bowl add chopped cucumber, tomato and parsley. Add spinach leaves, oil and lemon juice and gently combine. Season to taste with salt and pepper and place on a large serving platter.
Serve with crusty bread.
