Warm Chicken Salad

Ingredients:

  • 2 chicken breasts
  • 1 pkt Rainbow Fresh Mesculin Mix

Marinate:

  • 1/2 cup honey soy sauce
  • 3 tablespoons sweet chilli sauce
  • 1 tablespoon chopped basil
  • 1 clove garlic, crushed

Dressing:

  • 1/3 cup balsamic vinegar
  • 2 tablespoons sugar
  • 1/4 cup olive oil
  • 1 pkt Coriander
  • 1 tablespoons crushed garlic
  • Salt and pepper

Method:

Combine marinade ingredients in bowl. Place chicken in marinade and refrigerate for 1 hour before cooking. Pan fry chicken until cooked. Add remaining marinade juices to chicken while cooking. Remove chicken from pan when cooked. Slice chicken pieces and set aside.

Place Mesculin Mix on plate to serve. Arrange sliced chicken on Mesculin Mix and pour cooked marinade over chicken and salad.

Dressing:

Place coriander, garlic, vinegar, sugar and oil in jar and shake. Season with salt and pepper.

Pour dressing over salad and serve.
