Oak Leaf, Cranberry & Smoked Turkey Salad

  • 2 packets oak leaf
  • 1 apple (pink lady or red delicious), cored and thinly sliced in wedges
  • ½ red onion, thinly sliced
  • 400gm smoked turkey, medium slice, roughly torn into shreds
  • 100gm pistachio kernels, toasted and lightly crushed

Cranberry dressing:

  • ¾ cup dried cranberries, reconstituted
  • Zest of one orange
  • 2 tsp sugar
  • ¼ cup red wine vinegar
  • ½ - ¾ cup extra virgin olive oil
  • salt and pepper to taste


To make dressing:

Process all ingredients except oil in a food processor or blender; with motor running, gradually add oil in a steady stream.  Should yield approx. 2 cups.  To store for future use, place in refrigerator.

To assemble salad:

In a large bowl, place oak leaves, apple, red onion and turkey and drizzle 3-4 tbsp of the cranberry dressing and toss to combine.  Place on a serving platter, drizzle as little or as much of the dressing as you like and finish off with pistachio kernels.
