Antoinette's Simple Rocket Pasta

One of Antoinette’s favourite products is the Wild Rocket. It takes her back to her childhood in Italy, where they always ate Rocket. When Antoinette was working all day on the Farm and needed to prepare a quick and tasty meal this was it!  Here she share’s her secret dish with us:

  • 2 cups of Short Based Pasta such as Penne
  • ½ cup Extra Virgin Olive Oil
  • 2 cloves of garlic, minced
  • 200g Short Cut Bacon, diced
  • 100g Wild Rocket
  • 50g Parmesan, shaved


Bring pot of water to the boil and add pasta, cook until al dente.

Meanwhile, heat oil in frying pan and add garlic – make sure you do not burn the garlic, and then add the bacon and cook for 2 to 3 minutes.

When the pasta is cook, strain and then add to frying pan and toss well. At the last moment add the rocket, toss well and serve on a platter. Top with parmesan.
