Maria's Baby Spinach Quiche

Serves 6

Ingredients

Shortcrust pastry

1 packet of Rainbow Fresh Baby Spinach

50g grated cheddar cheese

3 tablespoons of parmesan cheese

150g ricotta cheese

Salt and pepper

6 eggs, beaten

Method

Heat oven to 180c.

Line quiche dish with shortcrust pastry. In a bowl combine Baby Spinach, cheeses, salt and pepper. Place spinach mixture into prepared quiche dish. Pour eggs over spinach mixture. Bake in moderate oven for 45 minutes or until set.  Serve ith salad for a delicious lunch or dinner.
