Chicken San Choy Bow served in Caesar Cos

Serves 4


1 tbsp Olive Oil
1kg Chicken Breast
2-3 cups Bean Sprouts
1 cup Corinder, finely chopped
1 cup Mint, finely chopped
2 large Red Chilies, seeded and finely chopped
1.5 bags Rainbow Fresh Caesar Cos


1/4 cup Kecap Manis
1/4 cup Olive Oil
1/4 cup Lemon Juice


Heat oil in frying pan.  Cook chicken breast until just cooked, do not brown. Remove from pan and dice finely.  Allow to cool.

Place all Caesar dressing ingredients except olive oil into a food processor and blend until combined.

In a bowl whisk together the dressing ingredients, then coat the chicken mixture and stir to combine.

Spoon mixture into Caesar Cos leaves and serve immediately.
