Creamy Chicken and Baby Spinach Pasta

  • 1 tbsp oil
  • 500gms Chicken Breast, diced
  • 4 rashers of Bacon, diced
  • 150gms Semi Tomatoes, roughly chopped
  • 4 Mushrooms, sliced
  • 4 Spring Onions, finely chopped (excluding green tops)
  • 2 cloves garlic, crushed
  • 500ml cream
  • 100g bag Rainbow Fresh Baby Spinach
  • 2 cups Pasta of choice


Cook pasta in boiling water.

While pasta cooking, heat oil in a large pan and cook chicken until golden brown. Once cooked remove chicken from pan and set aside.

In the same pan cook bacon, semi dried tomatoes, mushrooms, spring onion and garlic. Once cooked add cream and simmer uncovered until thickened.

Once thickened, stir through cooked chicken, cooked pasta, baby spinach and serve.
