Rocket, Bacon, Tomato & Parmesan Salad

This recipe serves 4


  • 1 pkt Rainbow Fresh Rocket
  • 200 grams cherry tomatoes
  • 4 rashers bacon
  • Parmesan cheese, grated or sliced


  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • Sea salt
  • Freshly ground black pepper


Cook the bacon on both sides until crisp. Drain on paper towel and cut into thick slices.

To make the dressing, combine the olive oil, vinegar, mustard, sea salt and pepper in a large bowl and whisk until combined.
Cut half of the cherry tomatoes in half and marinate in the dressing.

Toss the rocket in the dressing with marinated tomatoes, the whole tomatoes and the cheese. Add the bacon, toss lightly and serve.

For brunch, pile salad onto a piece of thickly sliced toast and serve topped with a soft boiled or poached egg.

Don’t forget to toss rocket through some freshly cooked pasta.
