Citrus Prawn Salad with Sweet Mix Lettuce

Ingredients:

 

Prawn Salad:

  • 20 cooked King prawns shelled deveined tails left intact
  • 2 medium avocados, cut in half, destined,
  • cut lengthwise in slices 4 vine-ripened small tomatoes cut into wedges
  • 2 packets of Rainbow Fresh Sweet Mix lettuce
  • 2 tbsp extra virgin olive oil
  • ½ bunch continental parsley, roughly chopped 

Citrus dressing:

  • 4 tbsp freshly squeezed orange juice plus zest of one orange
  • 4 tbsp freshly squeezed lemon juice plus zest of one lemon
  • 2 tsp Dijon or wholegrain mustard
  • 2-3 tbsp honey
  • 6 tbps extra virgin olive oil
  • Sea salt flakes, a pinch of white pepper, to taste

Method:

To make the dressing:

Combine ingredients in a bowl and whisk well.

To assemble salad:

Into a large bowl, place prawns, avocado and tomato. Pour ½ the dressing in the bowl and very gently, with your hands mix ingredients together, checking for seasoning.

In another bowl, combine Sweet Mix lettuce and drizzle with olive oil, toss to combine so salad leaves “glisten”. Arrange salad leaves on a large platter and place the prawn mixture on top. Drizzle with some more of the dressing, as little or as much as you like.

Sprinkle parsley on top and serve immediately.
