Peach and Rainbow Fresh Mesculin Mix Salad
Serves # 4
Ingredients:
- 1 x 120g Bag Rainbow Fresh Mesculin Mix ( or Rainbow Fresh Sweet Mix)
- 3 Peaches cut into wedges. (or nectarines)
- 1 red onion sliced into crescents.
- ¼ cup pumpkin seeds
- Shaved ParmesanDressing
Dressing:
- 1 glove garlic
- ½ teaspoon ginger
- ¼ cup white balsamic vinegar (or apple cider vinegar)
- ½ cup olive oil
- Salt & pepper
Method:
Toast pumpkin seeds in a dry frypan or oven until they just start to change colour.
Toss peaches, onion and Sweet Mix together and arrange on a platter.
Whisk dressing ingredients and season to taste.
Drizzle dressing over salad, top with toasted pumpkin seeds and shaved parmesan and serve.

Chefs note- Rainbow Fresh Sweet mix can easily be substituted for Mesculin mix
