Chicken San Choy Bow served in Caesar Cos

Serves # 4
Ingredients
  • 1 bag Rainbow Fresh Caesar Cos
  • 1 tbsp Olive Oil
  • 1kg Chicken Breast
  • 2-3 cups Bean Sprouts
  • 1 cup Corinder, finely chopped
  • 1 cup Mint, finely chopped
  • 2 large Red Chillis, seeded and finely chopped
Dressing
  • 1/4 cup Kecap Manis
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
Method:

Heat oil in a frying pan. Cook the chicken mince until just cooked, do not brown. Remove from pan and allow to cool.
In a bowl whisk together the dressing ingredients, then coat the chicken mixture and stir to combine. Add Bean Sprouts, herbs and chilli to the chicken mixture.
Spoon mixture into Caesar Cos leaves and serve immediately.
