Rocket, Pear and Walnut Salad

Serves # 4
Ingredients:
  • 1 bag Rainbow Fresh Rocket
  • 1 pear, cored, halved, and thinly sliced
  • 50gm grana padana, thinly shaved
  • ½ cup walnuts, toasted and slightly crushed
  • Salt and freshly cracked pepper, to taste
  • Dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar (or balsamic vinegar)
  • 1 tbsp dijon mustard
  • Pinch of sugar
  • ½ tsp salt
  • Freshly cracked black pepper
Method:

To make the dressing, add all ingredients in a small bowl and whisk to combine.

In a large bowl gently toss, rocket, pear, walnuts, and cheese (reserving some for garnish). Add the dressing and gently mix to combine. Serve on a large platter, garnished with reserved shaved cheese.

Serve immediately.

Chef’s note

Substitute walnuts for almonds or hazelnuts. Blue vein cheese works wonderfully with these flavours, as a substitute for the grana padana.
