Rocket, Pear and Walnut Salad
Serves # 4
Ingredients:
- 1 bag Rainbow Fresh Rocket
- 1 pear, cored, halved, and thinly sliced
- 50gm grana padana, thinly shaved
- ½ cup walnuts, toasted and slightly crushed
- Salt and freshly cracked pepper, to taste
- Dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar (or balsamic vinegar)
- 1 tbsp dijon mustard
- Pinch of sugar
- ½ tsp salt
- Freshly cracked black pepper
Method:
To make the dressing, add all ingredients in a small bowl and whisk to combine.
In a large bowl gently toss, rocket, pear, walnuts, and cheese (reserving some for garnish). Add the dressing and gently mix to combine. Serve on a large platter, garnished with reserved shaved cheese.
Serve immediately.
Chef’s note
Substitute walnuts for almonds or hazelnuts. Blue vein cheese works wonderfully with these flavours, as a substitute for the grana padana.
