Mizuna, is an ancient Japanese leafy green, which now can be found across the globe, and used in many cuisines. Rainbow Fresh harvest young leaves which are tender and offer a mildly peppery flavour, with a hint of mustard tang.
As with many leafy greens, Mizuna is nutrient rich and high in vitamins and minerals.
Mizuna is often used in salad mixes, and pairs well with sharp, peppery lettuces and other bitter greens. It also adds a mild bitterness and crunch to cold or hot pasta dishes, quinoa, pizza, or risotto. Mizuna can also be used in stir-fries, soups, or sautés, where the leaves will soak up some of the flavouring liquid.
Today, Mizuna is still used in Japanese cooking, mostly common pickled, in a Hot Pot or Sautéed with rice.
